Hyatt Hotel welcomes Chef Chad Ogden at The Cafe

Hyatt City of Dreams Manila says hello to Chef Chad Odgen, the hotel’s new Director of Food & Beverage and Culinary Operations. Chef Odgen brings wit him 27 years of rich culinary experience while working a a chef in different hotel and restaurant kitchens in the USA, Japan, Macau and Australia.

In order for us to know Chef Ogden more, we were treated to an explorer map. This map included dishes that is the specialty of Chef Ogden and is now part of their rotating buffet.

Two prominent dishes Chef Chad Ogden personally developed is the Sake-marinated Salmon, and the Chicken & Mushrooms in Milk.

The Sake Salmon is Chef Chad’s take on the classic gravlax, but incorporating his own Japanese twist to it. The Cafe is one of the few buffet that is really known for their raw Salmon. This one is a must try!

Another dish that is re-created by Chef Ogden is the Chicken & Mushrooms in Milk. Creating a lighter version of the very French cream based dish, Chicken Fricasse, without compromising flavor and comfort.

Aside from those two mentioned dishes, we were also treated to Chef Chad’s version of the Deep-dish Pizza, a classic Chicago dish, where he used to work.

Yakitori and Nabe, two classic Japanese dishes paying homage to Chef Chad’s previous work place.

Chef Chad explained that “the different flavors and textures that can be developed by putting cuts of chicken on a skewer are incredible, not to mention the cold beer served with the chicken and the socializing that happens during the meal.

One of the best Sisig I’ve tried was that of The Cafe. I didn’t really eat too much of what was presented because of “diet” but I sure ate so much of their sisig.

Chef Ogden states “I want to be able to try as many different types of Sisig as there are restaurants that produce the dish. I feel Filipino cuisine does not get the international attention it deserves, as the flavors here are awesome. Sweet, sour, and spicy– you cannot ask for more! The dishes are really incredible.”
